In restoration, gastronomy ovens are understood as those that can cook food in the different ways that traditional ovens have been able to cook, but also pits and stoves.

 

This type of ovens can do the cooking by conventional convection of the ovens but also by steam or even by both methods at the same time.

 

In this way, results are achieved in the kitchen that are not known until now, and in many cases the typical stoves are replaced by the efficiency and the maximum control of the ovens.
